Lemon Bar’s Recipe
Ingredients:
Crust:
2 cups sifted flour
1/2 cup powdered sugar
1 cup room temperature butter
Filling:
4 large beaten eggs
2 cups white sugar
1/3 cup lemon juice
1/4 cup flour
1/2 teaspoon baking powder
Directions:
Crust:
Preheat oven to 350 degrees.
Mix the butter into the flour and powdered sugar by hand until it clings together.
Press into a 13x9x2” pan.
Bake for 20-25 minutes.
Filling:
Preheat oven to 350 degrees.
Beat eggs, sugar, and lemon juice together for 2-4 minutes on high speed.
Sift flour and baking powder together.
Stir flour mixture into egg mixture.
Pour filling over baked, cooled to touch crust.
Bake for 25 minutes.
Cool and sprinkle w/ powder sugar.
Chef Alan’s Hint: Since ovens vary, test with a toothpick after 20 minutes in oven. The toothpick should come out clean when baking is complete.
