Lemon Bar’s Recipe

Ingredients:

Crust:

  • 2 cups sifted flour

  • 1/2 cup powdered sugar

  • 1 cup room temperature butter

Filling:

  • 4 large beaten eggs

  • 2 cups white sugar

  • 1/3 cup lemon juice

  • 1/4 cup flour

  • 1/2 teaspoon baking powder

Directions:

Crust:

  • Preheat oven to 350 degrees. 

  • Mix the butter into the flour and powdered sugar by hand until it clings together.

  • Press into a 13x9x2” pan.

  • Bake for 20-25 minutes.

Filling:

  • Preheat oven to 350 degrees.

  • Beat eggs, sugar, and lemon juice together for 2-4 minutes on high speed.

  • Sift flour and baking powder together.

  • Stir flour mixture into egg mixture.

  • Pour filling over baked, cooled to touch crust.

  • Bake for 25 minutes.

  • Cool and sprinkle w/ powder sugar.

Chef Alan’s Hint: Since ovens vary, test with a toothpick after 20 minutes in oven. The toothpick should come out clean when baking is complete.
