Shortbread Cookie Recipe
Shortbread cookies are my personal favorite. They are not too sweet, but they are delicious. I prefer to roll these cookies out on a lightly floured board and use my favorite cookie cutter for shapes. Some bakers put them into a cookie press. I like to ice shortbread cookies with icing made from powdered sugar, vanilla, and a little water. My wife thinks they are so good they don’t need icing. Perfect for dunking in your coffee.
Ingredients:
2 cups of butter, softened
1 cup of white sugar
2 teaspoons vanilla extract
4 cups all-purpose flour
Directions:
Preheat oven to 350 degrees
Cream butter and sugar in a mixer until fluffy
Stir in vanilla and mix well
Roll onto a lightly floured board and cut into shape
Bake for 10-12 minutes
Hint: bake until the cookies are only slightly browned around the edges. Cookies will continue to cook on the hot cookie sheet.
